When setting up the o365 WS Federation, will the Admin Login have to use a Global Admin Role or can that role be Security Admin or lower. What is least Privileged role that can or recommended to be used?

Hope you're doing great, the admin roles will depend on the permissions and actions you want them to perform, based on it you can define the roles needed, for the Admin we normally recommend that it uses the Company Administrator role that will be equals to Global Admin on O365, at least one user to have full permissions, if you want other users to have less permissions you can provide to them other role, here are some useful links for you:
