Is there a way for us to set requests from a specific IP address to be exempt from this requirement?

This should be achieved by leveraging network-zones. You can add the required IP addresses on a network-zone, then you can create a new MFA policy that will be not that strict only for users using that specific network-zone. Please see our docs below:
